His collaboration menu with Chef Hayashi exemplifies the chefs’ reverence for provenance—a delicately crafted wagyu sirloin tartelette, seasonal sweet shrimp paired with premium caviar, and tender grouper grilled over Japanese white charcoal, complemented by a classic French wine sauce. The journey crescendos to its peak with a perfectly marbled black wagyu steak accented by clean notes of spicy wasabi, followed by a comforting Japanese black abalone rice that captures the umami essence of summer.
