Dry Aged M7 Ribeye
An exceptional cut of Australian Wagyu, dry-aged to concentrate its rich, nutty character. The intensity of the marble is balanced by a smoky eggplant caviar and vibrant bell peppers, all tied together by a sophisticated Parmesan jus.

Australian Lamb Saddle
The epitome of summer succulence. A beautifully caramelized crust yields to a tender, rosy center, complemented by the deep, earthy notes of wild mushrooms and a silky broad bean purée.

Patagonian Toothfish
