Sweet asparagus and bamboo shoots meet the subtle bitterness of ostrich fern and tender koshiabura buds. An array of freshly harvested garden greens and mountain vegetables color your journey with their crisp, verdant notes.
From the sea comes a dynamic procession of seasonal treasures. Cherry salmon and red sea bream reach their peak during the cherry blossom season, prized for their refined flavor and balanced richness. Plump shellfish, succulent mantis prawn and richly marbled fat greenling further enrich the pageantry, each delivering waves of umami through masterfully composed expressions.
A perennial favorite at Yamazato, beautifully marbled Japanese black beef is grilled to perfection and served with the chef’s selection of seasonal greens and a fragrant vegetable sauce.
Presented with artful restraint and refreshing accents, our April kaiseki is a multisensory celebration of nature’s wonderful gifts.
