Briny sweet Hokkaido oyster is minced and served as a tofu appetizer, paired with creamy sea urchin. Flakey cod and custard-like cod milt are the star ingredients of the clear soup, with radish slices floating like sheets of ice. Yellowtail that has travelled from Hokkaido to Kagoshima to spawn is at its fattiest – and a zesty yuzu sauce makes for the perfect accompaniment.
