“Satsuki,” the traditional time for planting rice, marks the beginning of the agricultural cycle. Celebrating the vitality of nature, our kaiseki menu highlights refreshing flavors, beginning with delicately sweet surf clams and pen shell from Hokkaido, accompanied by seasonal vegetables. A clear soup of Aomori sea bass follows, before you dive into our daily selection of sashimi.
While our wagyu sushi and grilled Bungo wagyu steak remain perennial favorites, the dazzling array of small plates in the Hassun delivers unexpected surprises. Vegetables that thrive in the rainy season—such as water shield and rapeseed blossom—have been a key inspiration. May also heralds the trout season, and we are delighted to present the prized Satsuki trout at Yamazato.
