Executive Chef Hayashi Hideaki presents a thoughtful selection of pickled and fresh mountain vegetables such as butterbur, wasabi flowers and bracken. Delightful on their own, they reveal new dimensions of flavor when paired with meat and seafood.
The premium winter delicacy kinki fish lends its luscious richness to our clear soup, while the equally treasured alfonsino takes center stage in the rice course. To heighten the umami of Japanese halfbeaks—silver harbingers of spring—the fish is gently marinated in kelp stock and served with a delicate jelly of bonito broth and soy sauce.
