On April 10, 2026, as the snow melts and the wild hills of Northeast China awaken, Bei Shan Lou joins hands with Xinjiang's Silk Road Winery for an exclusive one-night-only "Wild Spring, Silk Road in Heart" wine dinner at Galaxy Macau.

Silk Road Winery, nestled in the Ili Valley of Xinjiang, sits where the Atlantic's warm, moist air finally rests. Known as "Jiangnan Beyond the Great Wall," this terroir benefits from long sunshine hours and dramatic temperature shifts. True to their philosophy of "not seeking size, but excellence," the estate practices small-batch, organic viticulture across 1,500 mu. Throughout the evening, Mr Li Yong, owner of Silk Road Winery, will guide guests through the unique terroir of the Ili Valley, sharing the stories behind each wine.

The evening's six-course menu captures the rhythm of a Northeast spring. The journey begins with an Appetizer Platter featuring Chinese Toon Tofu, Vintage Lily Bulb, and Marinated Abalone, perfectly paired with 2023 Silk Road Winery Rosé (Merlot).

For the mains, Stewed Beef Brisket in Traditional Style is paired with 2020 Silk Road Vineyards Selection (Cabernet Gernischt), where the wine's layered structure complements the rich, slow-cooked meat.

With limited seats available, this is an intimate journey through two of China's most distinctive culinary landscapes—the awakening wilds of the Northeast and the sun-drenched valleys of the West.
