This spring, the Teppanyaki Shou counter glows with seasonal vibrancy as a new omakase journey unfolds.

The opening course presents a symphony of pristine seafood, brightened with the mild spicy notes of kinome miso and crowned with Hokkaido sea urchin and glistening Oscietra caviar.

The clear dashi broth is a nod to the cherry blossom season—jet-fresh sashimi gives way to the gentle poetry of Aichi sea bream, paired with sakura mochi.

The premium menu celebrates Japan’s most coveted ingredients—deep-sea kinki, Alaskan king crab, and Toyama firefly squid at the height of its brief season in March and April.

The finale pairs custard-soft French toast with aromatic Daiginjo sake ice cream, a refined expression of sweetness and umami.
