Making the most of nature’s larder, our chef presents the light and velvety Green Peas Soup—a springtime staple in France—with refreshing mint and just a dash of cream to round the flavors out.
Pan-Fried Manta Ray Fish Skate Wing is another classic. The fish is cooked in lightly browned butter that imparts a rich and nutty flavor, with sakura shrimps oil, leeks and a squeeze of beurre noisette to brighten up the dish. Needless to say, the fish is perfectly cooked and amazingly fresh.
A dessert of Jasmine Panacotta with Honey Ice Cream, with its sour and mellow sweetness, brings your spring gourmet adventure to a delightful end.
