Pork Knuckle Stew with Ginger and Vinegar

According to Cantonese custom, the pork knuckle and ginger stew heralds the arrival of a baby, and is a must-have dish for the baby’s first month celebration. It is believed that the ingredients in the stew will improve blood circulation and expel cold and dampness from the body of the new mother. Therefore, it is a popular Cantonese postpartum dish as it speeds up recovery. 

For our secret recipe, chefs use egg, salted duck egg and quail egg to cook with 3 types of vinegar to add flavor and texture to the pot of sweet and sour goodness. A vegetarian version is also available by replacing pork knuckle with peanut, lotus seeds, purple sweet potato, taro and vegan chicken.
