At 8½ Otto e Mezzo BOMBANA, we welcome a rare convergence of culinary philosophies as Executive Chef Marino D’Antonio joins hands with Louis Han, the visionary chef-founder of Singapore’s Michelin-starred Korean restaurant Nae:um.
Chef Han, shaped by the multicultural energy and rhythm of Gangnam, brings a contemporary Korean sensibility—one defined by clarity, restraint, and deep-rooted memory. Chef Marino, working from Macau’s vibrant crossroads, channels an Italian intuition for seasonality and expressive, handcrafted flavors.
For their inaugural collaboration, the two chefs compose a season-driven tasting journey that celebrates the quiet poetry of their homelands. Ingredients from East and West find harmony in thoughtful, deliberate creations—each dish a conversation, each moment an exchange between cultural heritage and modern craft.
