At Yamazato, Executive Chef Hideaki Hayashi presents the Hazuki Kaiseki, a seasonal Japanese dining experience inspired by the poetic charm of August—known in traditional Japanese culture as Hazuki, the “Leaf Month.” As summer gently fades into early autumn, this elegant multi-course menu celebrates the subtle shift in nature with refined flavors and thoughtful presentation.
The journey begins with a vibrant appetizer featuring Ikawa taro, pumpkin, and octopus, delicately paired with Happo jelly, mini asparagus, and a touch of yuzu. These ingredients, historically favored by women since the Edo period, evoke a sense of nostalgia and seasonal grace.
The hassun showcases a harmonious array of small bites, including eel bread, half-dried sweet fish, lotus root with edamame mochi, and skewered abalone with shrimp and cucumber. Each element is carefully seasoned and arranged to reflect the richness of late summer, with highlights like grilled Tanaka pepper dusted with shichimi chili for a bold finish.
The grilled dish features Nara eggplant prepared two ways—one with duck dengaku miso, the other with soy sauce, ginger, and dried bonito—offering a contrast of savory depth and aromatic freshness. The rice course brings comfort and balance with Japanese seasoned rice topped with Yamagata tilefish and watercress, accompanied by red miso soup and pickles. It’s a warm, satisfying finale that gently closes the seasonal narrative.
