Hailed as “The King of White Truffles”, Chef Umberto Bombana is a culinary legend, thanks to his three-Michelin-starred prowess and for raising the profile of Italian gastronomy across the region. His cuisine is based on impeccably-sourced ingredients, and Bombana continues to delight fans in Macau, Hong Kong and beyond with his signature recipes.
8½ Otto e Mezzo BOMBANA Macau (One MICHELIN Star)
Italian Chef Marino D’Antonio partnered with Chef Bombana to open Opera BOMBANA, which quickly became one of the most popular Italian restaurants in Beijing. On top of opening many highly successful restaurants across China, Chef Marino has also authored culinary books to share his knowledge of Italian gastronomy in China.
8½ Otto e Mezzo BOMBANA Shanghai (Two MICHELIN Stars)
Chef Nicoló Rotella started his culinary journey in his native country Italy, perfecting his skills under Chef Umberto Bombana. His pursuit for excellence brought him to 8½ Otto e Mezzo BOMBANA in Shanghai where he continues the restaurant’s two-Michelin-star legacy with fresh inspirations and innovative brilliance.
Octavium (Two MICHELIN Stars)
Sicilian born Giuseppe de Vuono displayed great potential even as a student in hospitality, winning a Silver Medal at 17 in a prestigious competition. He moved from London to Tosca di Angelo at The Ritz-Carlton, Hong Kong. After refining his craft at several Michelin-starred establishments and five-star hotels, before joining Chef Umberto Bombana at his three-Michelin-starred restaurant in Hong Kong. Chef Giuseppe took the helm of Octavium in 2023 at just 29, leading the team to retain its two-Michelin-star status.
Tuber (One MICHELIN Star)
Captivated by the Italian culinary tradition, Hong Kong native Keith Yam flourished under the mentorship of such luminaries as Umberto Bombana, refining his skills at their acclaimed restaurants. Part of the Bombana family since 2009, this talented protégé is now a culinary master in his own right, leading the Tuber team to attaining its coveted Michelin Star for consecutive years running.
Cannubi (One MICHELIN Star)
Hailing from Merano in Northern Italy, Chef Andrea Susto established himself in Italy’s award-winning restaurants before joining 8½ Otto e Mezzo BOMBANA Hong Kong in 2018. He was appointed by Maestro Bombana to lead his Beijing restaurant Opera BOMBANA in 2020—where he later attained a Michelin star. Chef Andrea went on to help the maestro open Cannubi, the first Bombana restaurant in Bangkok and the winner of a Michelin star.
