Two Okura master chefs join forces for the first time to present a two-night-only Japanese kaiseki journey with an innovative French accent. Helmed by Chef Gerard Villaret Horcajo, Chef de Cuisine of Bangkok’s one-Michelin-starred Elements, inspired by Ciel Bleu, and Yamazato’s talented Executive Chef Hayashi Hideaki, the gastronomic journey will reveal the soul of Japan while showcasing the artistry of modern French cuisine.

The evening begins with autumn-inspired bites—monaka filled with chestnut, persimmon, pomelo, and tofu purée, alongside marinated chutoro with bafun uni and nori. A refined tartare of Miyazaki beef with Oscietra caviar and shiitake brioche follows, leading into a fragrant dobin-mushi soup with pike conger, clam, and mushrooms. Seasonal sashimi showcases Japanese purity, while scale-fried amadai and steamed abalone are elevated with French vadouvan sauce. Binchotan-grilled Miyazaki striploin is paired with Awaji onion and egoma mustard, followed by Hokkaido hairy crab and matsutake rice with red miso soup. Dessert features Shizuoka Crown melon, pear, grape, and a muscat and red bean mochi roll with matcha.
