Master Chef X The Macallan - “Litha” Whisky Dinner

Tim Lam, Executive Chinese Chef of Galaxy Macau, is a renowned culinary master of Cantonese cuisine. With a career spanning over 30 years, Chef Lam has pursued his craft with unwavering passion. He has attained the prestigious Michelin star for multiple years across various dining establishments, and garnered esteemed awards such as the International Chinese Chef Tournament.
Delivering exceptional experiences through creativity is a commitment that Chef Lam shares with the legendary Scottish single malt whisky brand, The Macallan. On September 16, an awe-inspiring culinary journey—“Master Chef X The Macallan–‘Litha’ Whisky Dinner”— shall unfold within the elegant confines of CHINA ROUGE at Galaxy Macau. Each exquisite dish of Chef Lam’s is a nod to Cantonese tradition and is carefully designed with the flavor notes of different Macallan whiskies in mind.
A highlight of the evening is The Macallan’s new launch “Litha”, an exceptional single malt that represents the coming together of two worlds—Scotland and Spain. It offers aromas of butterscotch and vanilla which unite with a spark of citrus over a bright canvas of tropical fruits, providing a multitude of flavors when paired with Chef Lam’s Crispy marbled beef in Taiwanese style. The Macallan Double Cask 15 Years Old, with its spicy and ginger notes, is the perfect whisky to match the bold flavors of Steamed chicken with ginger sauce and Stewed spicy fish in Sichuan style.

Crispy marbled beef in Taiwanese style

Staying true to a traditional Taiwanese recipe, marbled beef is seasoned with a blend of bean paste, ginger, garlic and soy sauce. After slowly braising the beef to tender perfection, it is enveloped in a batter and deep-fried to golden and crispy deliciousness. Drizzled with a rich and mildly spicy sauce, it pairs exquisitely with whiskey, elevating your culinary experience to new heights.

Harvested from the pristine waters off South Africa, our abalone feeds on natural kelp and seaweed, resulting in its incredible marine sweetness and meaty texture. It is slow-cooked for over ten hours in a pork rib and chicken broth to become a gastronomic luxury packed with umami flavors and a wealth of health benefits.
