Drawing inspiration from the natural meeting point of river and sea, this seafood-forward menu celebrates transformation and renewal. Here, savory consommés, delicate jellies, fermentation, wood-fired cooking, and essential oils extraction build depth and clarity. Each dish reflects a philosophy of balance: indulgent yet nourishing, refined yet vital, backed by a reverence for craft and rare local ingredients.
The result is a pristine gastronomic experience that leaves you feeling deeply sated — where modern French gastronomy meets the highest standards of Asian hospitality.
Culinary Philosophy: Harmony of Two Worlds
The name Estuary captures the fecund place where fresh and salt waters converge. Chef Vicky brings together his classical French training with over a decade of Asian exploration. Estuary represents a full-circle moment — a reverential understanding of flavor, culture, and craft, expressed through a menu that balances nourishment, generosity, and refined finesse.
The Dining Experience
The journey unfolds with a sense of Parisian grand-hôtel ceremony: an artisanal bread and butter service, guéridon tableside presentations, a traditional champagne trolley for aperitifs, and sequential dessert, coffee, and tisane service alongside candlelit wine decanting.
The seasonal tasting menu reflects Chef Vicky's signature style: intentional, precise, and quality ingredient-driven, revealing unexpected layers of flavor and texture. Subtle notes of fermentation run through the menu, along with savory rich broths and the nuanced flavors of char-grilled and wood-fired cooking.
The wine list celebrates Old World vintages from France alongside select New World wines, including rare heritage vintages. A non-alcoholic pairing is also available upon request.
The Design: An Immersive Spatial Journey
Designed by J Candice, the interior mirrors the tidal themes of transformation. Enter through a towering 5.7-metre carved ash-wood door past artist Martin Gallo's Splash sculpture. An Art Nouveau-inspired dining room with a domed ceiling opens to a polished Molteni 1923 open kitchen — a center stage where craft moves in synchronized rhythm. Sculptural lighting by Lasvit casts waterlike reflections in the private room, completing the sensory landscape.
