Pony & Plume, Capella at Galaxy Macau’s first-of-its-kind whisky and cocktail bar, introduces its inaugural guest-shift series, “The Finest Pour at Pony & Plume”
A recurring celebration of contemporary mixology, the series invites an exchange between the world’s most compelling bartending talents and discerning cocktail enthusiasts. Its debut edition welcomes Yeonghwi Yun, co-owner of Korea’s acclaimed Bar Cham, as he brings his mastery to Pony & Plume, in front of its spectacular pyramid of over 650 rare whiskies.
Since opening in 2018, Bar Cham has steadily gained recognition for pushing the boundaries of mixology, earning its highest accolades to date—No. 6 on Asia’s 50 Best Bar, and No. 53 on The World’s 50 Best Bars.
Meaning “oak” in Korean, Bar Cham’s name echoes its reverence for nature and time. Each cocktail is thoughtfully composed, weaving Korean tradition with local ingredients and quiet innovation. House-infused teas and spirits, layered with native fruits and spices, distill narratives both familiar and unexpected in a single glass.
