8½ Otto e Mezzo BOMBANA is proud to present an exclusive wine dinner, celebrating three-Michelin-starred maestro Umberto Bombana’s wines, developed in partnership with visionary winemaker Enrico Togni Rebaioli. This one-night-only event brings together visionary winemaker Enrico Togni with the culinary mastery of one-Michelin-starred Executive Chef Marino D'Antonio, who has curated a bespoke six-course menu tailormade to match the elegance and depth of Chef Bombana’s handpicked bottles.
Guests will embark on a refined culinary journey, beginning with delicate King Crab accompanied by winter vegetables and Oscietra caviar, progressing through handmade Cavatelli enriched with sea urchin, and savoring the delicate Kinki Fish with clam jus. A highlight of the menu is the exquisite Tagliolini adorned with Alp's butter and white truffle, leading to the robust flavors of Mayura Signature Short Rib & Tenderloin. Each course is thoughtfully paired with a selection from Enrico Togni's artisanal portfolio, including the vibrant "Martina" Rosato and the structured "Scabe" Merlot.
The oenological journey culminates with the serving of the celebrated 2022 Enrico Togni-Rebaioli "R8½" Riserva—a wine that embodies the soul of the Nebbiolo grape—presented from an impressive 3-liter Jeroboam bottle. We are honored to welcome Enrico Togni as our special guest, who will share the story of his family's heritage in Val Camonica and his dedication to organic winemaking.
