Adventures in the Cavern – Mostly Harmless X Long Bar Macau

For your upcoming journey in the “Adventures in the Cavern” series, we are thrilled to present the debut collaboration between Ezra Star—industry icon and owner of Hong Kong’s award-winning bar Mostly Harmless—and Long Bar Macau’s cocktail visionary, Nokoy Mak.

With over two decades of experience, Ezra has contributed to the success of numerous renowned bars around the world—not only as a bartender, but also as a chef and bar consultant. Her establishments have earned recognition from The World’s 50 Best Bars, Asia’s 50 Best Bars, as well as accolades at the Tales of the Cocktail Spirited Awards, including “Best American Bar Team,” “American Bar of the Year,” and “World’s Best Bar.”

Currently ranked #88 on Asia’s 50 Best Bars, Mostly Harmless is a farm-to-glass omakase bar that champions homegrown ingredients, as well as in-house fermentation and culture.

As the creative force behind Long Bar Macau, Nokoy Mak pays homage to the legacy of the Singapore original through his imaginative, gin-focused concoctions. His long list of achievements includes a standout showing at Tatler Best 2025, where he clinched three awards in Long Bar’s first year: "Rising Star,” “Best 20 Bars,” and “Best New Bar” in Macau.
