As the season transitions from autumn to early winter, Yamazato at Hotel Okura Macau is proud to present the Shimotsuki Kaiseki, a meticulously crafted menu that celebrates the finest seasonal ingredients of November. This exclusive dining experience captures the subtle shift in nature’s flavors, offering guests an unforgettable journey through the richness of winter’s first offerings.
The journey begins with the ocean’s bounty—female snow crab, known as Kobako-gani, now in season, offers a luxurious taste with its rich roe and creamy innards. The king of winter white fish, grouper, reaches its peak succulence, while other delicacies such as black bluefish, cod milt, and monkfish liver deepen in flavor, embodying the essence of the cold-weather seas.
A clear soup made with Kagoshima cornetfish and Kyoto’s traditional Shogoin radish opens the meal with warmth and elegance. The Hassun, a seasonal platter, artfully combines grilled bluefish in yuzu sauce, cauliflower jelly, monkfish liver with citrus vinegar, and other autumn-winter specialties, creating a harmony of taste and texture.
One of the highlights is the fish course—Hokkaido cod and milt wrapped in deep-fried tofu skin, delicately topped with chrysanthemum starchy sauce. This dish delights both the eyes and the palate. For the meat course, grilled Japanese black beef steak is served with seasonal vegetables and a fragrant vegetable sauce, showcasing the depth and tenderness of premium wagyu.
The main course is a comforting bowl of seasoned rice cooked with female snow crab and fried Shogoin turnip, complemented by red miso soup and pickles.
