The journey begins with the ocean’s bounty—female snow crab, known as Kobako-gani, now in season, offers a luxurious taste with its rich roe and creamy innards. The king of winter white fish, grouper, reaches its peak succulence, while other delicacies such as black bluefish, cod milt, and monkfish liver deepen in flavor, embodying the essence of the cold-weather seas.

A clear soup made with Kagoshima cornetfish and Kyoto’s traditional Shogoin radish opens the meal with warmth and elegance. The Hassun, a seasonal platter, artfully combines grilled bluefish in yuzu sauce, cauliflower jelly, monkfish liver with citrus vinegar, and other autumn-winter specialties, creating a harmony of taste and texture.

One of the highlights is the fish course—Hokkaido cod and milt wrapped in deep-fried tofu skin, delicately topped with chrysanthemum starchy sauce. This dish delights both the eyes and the palate.
