The opening courses celebrate ocean-fresh umami. Tottori snow crab, Hokkaido scallop, and glistening pearls of Oscietra caviar are delicately layered between crisp monaka wafers. This is followed by Nagasaki tuna and botan shrimp, their natural sweetness offset by the savory depth of dried mullet roe and Kyoto white miso.
A soul-warming dashi follows, paired with a tender fish cake of Aichi sea bream or the firm, flaky elegance of Fukui tilefish. On the premium menu, a golden croquette of creamy ebi-imo taro is finished with freshly shaved black truffle, offering a moment of comforting indulgence.
At the teppanyaki grill, sizzle and aroma unfold in harmony. Australian lobster is dressed in a robust bisque sauce, while beautifully marbled Oda wagyu is seared with precision to achieve a melt-in-the-mouth finish — each dish a testament to craftsmanship and restraint.
