With his new lunch menu, Michelin-starred Italian chef Marino D’Antonio invites you on a journey celebrating tradition, provenance and the culinary influences that have shaped his artistry. Refreshed bi-monthly, the menu spotlights one Italian region at a time, alongside a curated selection of Bombana signatures and seasonal specials. 

The first region on showcase is Piedmont, the northern heartland of Italian gastronomy, most famous for its wines, truffles, hazelnuts and Fassona beef. Surrounded on three sides by the Alps, Piedmontese cuisine marries rustic, hearty flavors with luxurious ingredients—dishes that are best enjoyed in the cold winter months. 

 

Vitella Tonnato

Vitella Tonnato is an elevated rendition of a Piedmont classic, where tender slices of boiled Fassona veal are dressed with a creamy sauce of tuna belly and capers.

Agnolotti del Plin

The traditional ravioli Agnolotti del Plin is a childhood favorite of Chef Marino’s. This reimagining is packed with the rich flavor of roast beef and its jus.

Brasato al Barolo

Dubbed “the wine of kings and the king of wines,” Barolo is the pride of Piedmont. Beef cheek and tongue are slowly braised until fork-tender, and served with a rich Barolo sauce and airy whipped potatoes.

Bonet Piemontese

A velvety, decadent chocolate pudding with light, crisp amaretti and crunchy hazelnuts from Piedmont—presented by the restaurant’s new Chef de Cuisine - Chef Padzli.
