Shojin Vegetarian Kaiseki

Experience mindful dining where sustenance becomes a source of enlightenment with this plant-based kaiseki inspired by “shojin ryori.” 

Meaning “food for spiritual practice,” shojin ryori has over a thousand years of history and is one of the pillars of Zen practice, with the aim of purifying the body and mind. Staying true to the spirit of this cuisine, every vegetable on the kaiseki menu is carefully chosen to reflect the color and beauty of the season, such as Kyoto vegetables cultivated through traditional techniques perfected over a hundred years. Highlights include eggplant and yam from Kyoto. 

“Sashimi” is silky smooth fresh tofu skin made from Kyoto water and Japanese soy beans of the highest quality. To enrich the vegetables with a dash of umami, Hokkaido kombu and Kyoto miso are used in a number of dishes. Even the rice in the main dish is carefully chosen to deliver a sense of bliss as its delightful sweetness fills your mouth.
