The rainy season of Japan brings with it a plethora of beautiful ingredients that are best enjoyed in their prime. The kaiseki this June is dominated by refreshing and delicate flavors which are further enhanced by Chef Takeda Morihiro’s ingenious ingredient pairings. 

The appetizer sets the tone of this summer feast with the fragrant and pleasing aroma of sweetfish, with tangy citrus making it all the more appetizing. Hassun is a series of meticulously crafted small plates including fried crab meat cake with crunchy zucchini, and steamed conger eel with soft egg tofu. Prized for its delicate, sweet flesh, cutlassfish from Ehime is ideal for grilling. The creative use of salted fish guts in the egg yolk butter sauce imparts a light touch of umami to the dish. Other delicacies include Hyogo pike conger that is carefully deboned and deep-fried into crispy tempura, fresh sashimi of the day and premium Kagoshima wagyu.
