Persimmon, bright orange and ripe with sweetness, lends a honeyed flavor to your appetizer of soft tofu, shrimp and earthy vegetables. Seasonal catches also find their way to your table. Sweetfish from pristine rivers are slowly simmered until tender to the bone so you can enjoy a whole fish, together with its roe, in one mouthful. Your grilled dish is Hyogo tilefish served with fluffy taro and a rich, velvety sea urchin sauce to offer a symphony of textures. Ocean treasures in the form of golden threadfin bream and a snow crab sauce are to be found as you dig into the steamed soy egg custard.
