Known as "uni" in Japan, spiny sea urchins grow creamy and plump as they get ready for the spawning season in autumn. Among the many species, bright orange "bafun uni" from Hokkaido is most sought-after for its distinct sweetness.
This season, Hotel Okura Macau is taking the umami sensation to a new level by pairing Hokkaido bafun uni with soy marinated salmon roe (ikura) that are bursting with flavor. The set showcases the seafood duo on a bed of fluffy Japanese rice and is complete with miso soup, pickles, white sesame tofu cake and a drink.
