Autumn is the highly anticipated season for gastronomy as it is known as the harvest season and famed for ‘Autumn’s appetite’ in Japan as summer heat relieves. Matsutake mushroom is the most iconic Japanese Autumn flavour. Matsutake with ginko enhances the essence of the Conger Pike and Prawn Soup steamed in Dobin teapot. 

Hassun is one of the main courses in kaiseki, presenting a wide variety of seasonal ingredients. Discover this season’s offers such as salmon roe, fresh and never frozen, and sweetfish fatten with roe, slow-cooked for 12 hours for the tenderness.
