A unique adaptation of a traditional dish from Antimo’s native Naples, the Eggplant "Parmigiana" is steamed and sautéed to maintain its rich, sweet taste, and perfectly complemented with tomato, cheese, burrata and basil. The Wagyu Shoulder Cut is an expertly butchered cut selected by Antimo for its versatility and intensity of flavor, combined with the freshness of roasted vegetables and the seductive umami of olive oil jus.
