Terrazza, Galaxy Macau’s Michelin Plate Italian restaurant, understands perfectly that great tasting food requires patience. To fully express the natural flavour of Snowy Mountain Lamb shoulder the meat is cooked as a confit at  85°C for between five and six hours with olive oil, Mediterranean herbs, vegetables and garlic. When fully cooked the meat is crunchy on the outside but tender within. The subtly flavored lamb is complemented by celeriac purée and fondant potato.
