Yamazato, the signature Japanese restaurant of Hotel Okura at Galaxy Macau, is renowned for the highest quality seafood, presented in a manner which honours Japanese tradition in a distinctly modern way. Chief executive chef Akira Hayashi, from Kyoto, has chosen to present Vietnamese Giant River Prawn in the form of Kakiage, deep fried tempura style with vegetables  in exquisitely light batter, enhanced by his own special sauce which is  made to a secret recipe and aged for no fewer than eight years. The sauce emphasises and enhances the multiple layers of flavor of these succulent shellfish, and the complementary tastes and textures of the accompanying vegetables. This Kakiage is a perfectly balanced dish which will be a revelation to diners.
