Chef Sylvain Perraut of Café de Paris Monte-Carlo has been inspired by Vietnamese Giant River Prawn to create a delicious cold appetizer in the form of a ceviche. A tangy refreshing dish with a lemon, herb and extra virgin olive oil dressing, it is appropriate at any time of year.  Classically elegant in its simplicity, the ceviche balances the saltiness and fresh acidity of the dressing with the sweet succulence of the shellfish.
