At Belon, the premium western restaurant at Banyan Tree Macau, the chef has been inspired by Yellow-feather chicken to create three unique dishes. Warming Homemade Tagliolini, White Truffle and Yellow-feather Chicken Consommé is made with al dente fresh pasta, and the juicy chicken meat is enhanced by precious seasonal white truffles. Yellow-feather Chicken Casserole with Wild Mushrooms is based on a traditional French recipe, but replaces the usual pheasant with the Chinese gourmet fowl, cooked with mushrooms, seasonal vegetables and a rich red wine tomato sauce. Slow casserole stewing combines the flavors to magnificent effect. Oven Roasted Yellow-feather Chicken “Piri Piri”, with Herb Roasted Potato Wedges is cooked with a piquant spicy sweet and salty sauce which flavors the meat as it roasts.
