Antimo has crafted a new 4-course weekend lunch set menu with seasonal ingredients imported from around the world.

As Executive Chef of 8 ½ Otto e Mezzo BOMBANA Macau, Antimo Merone adheres rigorously to chef-owner Umberto Bombana's culinary philosophy and respect for nature, and has steered 8½ Otto e Mezzo BOMBANA to One Michelin Star glory three years in a row. Antimo's love for food started at a young age. Growing up in rural Naples, he was surrounded by an abundance of local produce and seafood, and quickly developed a discerning eye for the freshest and finest ingredients. 

Antimo has crafted a new 4-course weekend lunch set menu with seasonal ingredients imported from around the world. The menu is a true showcase of culinary excellence – featuring premium king crab legs from Alaska and the finest wagyu sirloin from Australia's award-winning Mayura Station.

“Artisanal Spaghetti with Alaskan King Crab, Spring Vegetables and Parsley Emulsion” is served rigorously “al dente” as Italian tradition wants. Spaghetti from Pastifico Gentile, Gragnano of Italy, is cooked with Alaskan king crab legs and a very intense crustacean broth until the sauce is thickened. It is finished with a refreshing spoon of parsley puree and two seasonal vegetables from Italy, green peas and fava beans, meticulously cleaned piece by piece.

“Mayura Beef Farm Wagyu Sirloin over Oak Charcoal, Vaucluse Asparagus and Roasted Roots”  uses sirloin steak from the Australian  award-winning boutique beef producer that specializes in breeding 100% full-blood wagyu beef. The sirloin is pan-roasted then finished on Japanese oak charcoal for extra flavor. It is matched with green asparagus from France and some baby root vegetables. Served with natural beef jus that is obtained after 3 days of preparation, this dish will excite your palate with succulent texture and intensity of flavors.
