The origins of kaiseki are centuries old. It has its roots in elaborate styles of dining from throughout Japan’s history, including imperial court cuisine from the 9th century, Buddhist cuisine from the 12th century, samurai cuisine of warrior from the 14th century, and tea ceremonies from the 15th century, all formalized over time. Ultimately, the elements of kaiseki are created at the chef’s discretion, making each meal an individual and unique experience for the diners.
